Arugula Salad

Refreshing and simple with a perfect balance of flavors.

INGREDIENTS
 1 lb Arugula, trimmed, washed well and dried
 4 Navel Oranges, peeled and cut crosswise into 1/4-inch-thick slices
 ½ Red Onion, cut into 1/8-inch-thick slices and separated into rings
 6 tbsp Extra-Virgin Olive Oil
 2 tbsp Fresh Lemon Juice
 ½ tbsp Salt
 Freshly Cracked Black Pepper, to taste
DIRECTIONS

Just before serving, combine the arugula and the orange and onion slices in a large serving bowl.

Drizzle with the olive oil and lemon juice, and season with salt and cracked pepper to taste.
